The deficiency can progress to iron-deficiency anemia and cause symptoms such as fatigue, weakness, and difficulty concentrating. The National Institutes of Health distinguishes dietary iron into two main forms: heme and non-heme. According to the institution, meats and seafood provide both forms, while plant-based foods provide only non-heme iron.

The scientific review Iron Absorption: Factors, Limitations, and Improvement Methods explains that heme iron is absorbed more efficiently and is less affected by meal components. Non-heme iron, on the other hand, can have its uptake reduced by compounds such as phytates and polyphenols, natural substances found in foods such as grains, seeds, coffee, and tea.

That does not mean plant sources are unimportant. Beans, lentils, dark leafy greens, and fortified foods also contribute to mineral intake. In addition, vitamin C can help improve the absorption of non-heme iron when these foods are eaten in the same meal.

Beef can be part of meals with rice, beans, vegetables, and greens. This combination brings together heme and non-heme iron, as well as protein, fiber, vitamins, and other minerals.

The amount of iron varies according to the cut. Offal, such as liver, usually has a higher concentration, although muscle cuts also contribute to nutrient intake.

Pairing the meal with foods rich in vitamin C, such as orange, lemon, tomato, bell pepper, or broccoli, can improve the use of the non-heme iron found in beans and vegetables. Heme iron, meanwhile, is less affected by these dietary components.
